En la actualidad existe una tendencia al aumento en el consumo de frutas y hortalizas debido al interés de una alimentación más saludable así como también ocacionado por la busqueda de alimentos listos para comer. Por otro lado a nivel mundial ha surgido una preocupación por el uso excesivo de materiales sintéticos que dañan el planeta por lo que se han desarrollado los envases alimentarios elaborados con materiales biodegradables dentro de los cuales estan los recubrimientos comestibles (RC) a base de polisácaridos; la linaza es una semilla rica en éstos que puede ser utilizada como matriz para los RC. El presente trabajo se dividió en tres etapas; en la primera se evaluaron métodos de extracción de mucílago de linaza en base a su rendimiento donde se eligió la relación 2:10 (semilla:agua). La segunda etapa tuvo como objetivo elaborar RC a base de mucílago de linaza con el método seleccionado en etapa 1 donde se formuló con glicerol como agente plastificante encontrando adecuado el uso del 0.3% del mismo y finalmente la tercera etapa tuvo como objetivo evaluar la influencia del RC en fresas mínimamente procesadas para alargar la vida útil. A las fresas mínimamente procesadas se les aplicó por inmersión el RC pudiendo ver su incorporación mediante microscopia electrónica de barrido así como se logró demostrar el beneficio del RC para alargar la vida útil al presentar tasa de respiración de CO2 menores (31.49±0.9 kg-1 h-1) a las fresas sin recubrir (39.33±0.8 kg-1 h-1) y mediante el índice de decaimiento en fresa cubiertas no se observo daño para el día 12 de almacenamiento a 5° mientras que las fresas sin recubrir presentaron daño ligero y moderado para el mismo día. Se determinó la calidad microbiológica de fresas cubiertas con mucilago de linaza y un agente conservador como lo es benzoato de sodio observándose un menor crecimiento de microorganismo mesófilos, coliformes fecales, hongos y levaduras.

At present there is an increasing trend in consumption of fruits and vegetables due to the interest of a healthier diet as well as the search for food ready to eat. On the other hand global concern is raised by the excessive use of synthetic materials that harm the planet for what they have developed food packaging made from biodegradable materials within which are the edible coatings (EC) based on polysaccharides; Flax seed is rich in them that can be used as a matrix for the EC. This work was divided into three phases, the first extraction methods were evaluated flaxseed mucilage on the basis of their performance where they chose the ratio 2:10 (seed: water). The second phase aimed to develop based EC linseed mucilage with the method selected in step 1 which was formulated with glycerol as plasticizer found appropriate to use the same 0.3% and finally the third stage was to evaluate the influence of EC minimally processed strawberries for extended shelf life. A minimally processed strawberries were applied by dipping the RC can see its incorporation by scanning electron microscopy and were able to demonstrate the benefits of EC to extend lifespan introducing CO2 respiration rate of children (31.49 ± 0.9 kg-1 h-1) to uncoated strawberries (39.33 ± 0.8 kg-1 h-1) and by the rate of decay in strawberries covered damage was not observed for 12 days of storage at 5 ° while the uncoated strawberries damage was light to moderate for the same day. We determined the microbiological quality of strawberries covered with linseed mucilage and a preservative such as sodium benzoate also reduced mesophilic microorganism growth, fecal coliforms, fungi and yeasts.
